EcoBalance Farms is Idaho's first and only cricket farm, and it's already reached 20 million insects.

The farm wants to break the negative stereotypes surrounding cricket meat. Owners say crickets contain twice as much protein as spinach and all nine essential amino acids.

"I found that crickets have been used for human consumption around the world," said Starla Barnes, president and CEO of EcoBalance Farms. "So I started looking into the cricket and what it offered... and as a dried powder it offers nearly 70% protein."

Barnes explains how they stay open during colder seasons, "honestly I don't think people every thought crickets could be grown in Idaho... it's kind of a cold climate."

Other cricket farms have to shut down in the winter or pay for high heating costs, but Barnes uses geothermal heating to keep her operation running year round and "100 percent free."
